Thát yeár, I posted á few recipes by my fávorite blogger (álexis of Hummusápien) thát I cooked, like báked spághetti with tofu ricottá (OMG) ánd her fámous curried chickpeá sálád. I máde thát sálád SO MUCH. It’s full of chickpeás, veggies, cáshews, ráisins, ánd á creámy curry táhini sáuce thát I could drink.

INGREDIENTS

  • 1 páckáge Sweet Eárth Foods Curry Sátáy Seitán, chopped
  • 1 cup grápes, hálved
  • 2 smáll or 1 medium cárrot, diced
  • 2 stálks celery, diced
  • ½ bell pepper, diced
  • ½ cup non-dáiry máyonnáise or non-dáiry unsweetened yogurt
  • ¼ cup álmonds, chopped
  • ¼ cup cilántro, finely chopped
  • 2 teáspoons curry powder
  • Sált ánd pepper, to táste

INSTRUCTIONS

  1. In á lárge bowl, ádd áll ingredients. Stir to evenly coát áll ingredients in the máyonnáise ánd curry powder. Seáson with sált ánd pepper to táste.
