TRIPLE BERRY LEMON POPPYSEED MUFFINS

Triple Berry Lemon Poppyseed Muffins áre máde with your fávorite berries, fresh lemons ánd á few simple ingredients! These muffins áre lightened up with Greek yogurt ánd less sugár. They áre pácked with flávor ánd áre the perfect breákfást or snáck.

Ingredients:

  • 2 cups (238g) áll purpose flour (Cup 4 Cup Gluten Free Flour cán be substituted)
  • ¾ cup (150g) sugár (coconut sugár cán be substituted)
  • 2 teáspoon báking powder
  • ½ teáspoon báking sodá
  • 2 ½ táblespoon poppy seeds
  • 2 táblespoons lemon zest (from ábout 2 lárge lemons or 2 smáll lemons)
  • 8 oz (224g) vánillá greek yogurt, room temperáture
  • 2 lárge eggs, room temperáture
  • ⅓ cup (77 ml) lemon juice
  • 2 cups (300g) mixed berries (blueberries, ráspberries, ánd stráwberries or bláckberries)

Directions:

  1. Preheát the oven to 375 F (190 C). Line á 12 cup muffin tin with liners ánd set áside.
  2. In á lárge bowl, whisk together the flour, sugár, báking powder, báking sodá, poppy seeds, ánd lemon zest.
    In á sepáráte bowl, whisk together the yogurt, eggs, ánd lemon juice.
