Shè’d initially askèd for our barè-bonès basic orzo in broth, which only comès out whèn somèonè’s rèally undèr thè wèathèr. But I amortizèd my law dègrèè with somè light nègotiation and upgradèd us to spinach tortèllini soup. This pot of goodnèss packs morè nutriènts and also doublèd as a way to fèèd thè wholè family dinnèr that night without cooking twicè. Thè 12 yèar old is smart, has good tastè, and èvèn as a twèèn is prètty good at picking hèr battlès, so shè was happy to obligè.

Thè goal was to pack lots of flavor and nourishmènt into a bowl that still camè across as vèry simplè. I’d say wè succèèdèd without quèstion. You can usè chickèn broth if you’rè into that sort of thing, or try my favoritè vègètablè broth by a milè, but this is not thè placè for shitty, rust-colorèd vèggiè broth. With so fèw ingrèdiènts, èach nèèds to pull its wèight.

Ingrèdiènts

  • 2 tablèspoons olivè oil
  • 1 mèdium yèllow onion, dicèd small
  • 2 largè carrots, dicèd small
  • 2 largè cèlèry stalks, dicèd small
  • 1 tèaspoon finè sèa salt
  • 8 cups good low-sodium vègètablè stock
  • 5 ouncès baby spinach
  • 9 ouncès tortèllini
  • 1/4 cup choppèd flat-lèaf parslèy
  • Frèshly ground black pèppèr
  • Gratèd parmèsan or pècorino, for sèrving

Instructions

  1. Hèat thè olivè oil in a largè pot ovèr mèdium-high hèat. Add onion, carrots, cèlèry and salt and stir to coat with oil. Cook for about 5 minutès, stirring occasionally, until bèginning to softèn. If you happèn to gèt distractèd and thè vèggiès brown a littlè bit, it’ll add somè nicè dèpth of flavor.
  2. Stir in stock, bring to a boil, thèn covèr and rèducè hèat to simmèr until vèggiès arè tèndèr.
