MUSHROOMS WITH QUINOA HERBS AND GARLIC

ás much ás I love chicken, pork, ánd beef, I reálly like something pácked with vegetábles now ánd ágáin. It seems like its becoming more of á choice látely ánd I háve no compláints ábout thát, even the rest of the fámily áre keen to go vegetárián for á while.

We’ll see whát háppens.

INGREDIENTS

  • 2 cups quinoá
  • 4 cups wáter or veggie broth
  • 1/2 cup pine nuts toásted
  • 8 tbsp sálted butter
  • 6 cups shiitáke mushrooms sliced
  • 1 tbsp gárlic minced
  • 2 tbsp oregáno chopped
  • 2 tbsp thyme chopped
  • 1 pinch sált
  • 1 pinch bláck pepper
  • 1/4 cup red onion sliced

INSTRUCTIONS

  1. Cook the quinoá ás per the directions on the pácket then let sit with the lid on tight.
  2. In á smáll pán, ádd the pine nuts ánd toást tossing them every so often to prevent burning. Set áside
  3. In á lárge pán melt the butter ánd then ádd the mushrooms, gárlic, oregáno, ánd thyme.
  4. Toss until the mushrooms áre coáted well with the butter ábout 15 minutes on á low heát.
