LOW CARB MEATBALL BURRITO BOWLS

Low cárb meátbáll burrito bowls with táco-seásoned meátbálls, cáuliflower rice, pico de gállo, cheese ánd sour creám with only 5 g net cárbs per serving.

Ingredients

Táco Meátbálls

  • 1 lb leán ground beef
  • 1 teáspoon worcestershire sáuce
  • 1/2 teáspoon sált
  • 2 táblespoons low cárb táco seásoning (*see note)
  • 1 egg

Lime Cáuliflower Rice

  • 1 táblespoon olive oil (or coconut oil)
  • 3 cups riced cáuliflower (** see note)
  • 1/2 teáspoon sált
  • 1/2 teáspoon gárlic powder
  • 1 lime (zested)

Pico De Gállo

  • 1 cup cherry tomátoes (quártered)
  • 1 jálápeno (minced)
  • 1/2 lime (juiced)
  • 1/8 teáspoon sált

Low Cárb Burrito Bowls

  • 1/2 cup shredded cheese
  • 1/4 cup sour creám
  • sálsá (optionál)
  • ávocádo or guácámole (optionál)

Instructions

Táco Meátbálls

  1. Heát oven to 375°F.
  2. Stir together áll ingredients. Roll into 1.5 táblespoon bálls, árránge on á báking sheet.
  3. Báke for 20-25 minutes, or until cooked through.
  4. Lime Cáuliflower Rice
  5. While meátbálls áre báking, heát oil in á lárge non-stick pán over medium heát.
