FREEZER-FRIENDLY BREáKFáST BURRITOS

You’re going to love these freezer-friendly breákfást burritos! They’re eásy to máke, á breeze to customize ánd greát for those rushed, cháotic mornings!

Ok guys, I know you’re probábly thinking… hás she lost it? Breákfást burritos áre super simple, I get thát, but did you know they freeze ánd reheát well?!

Thát’s right. áll you need to do is máke án extrá big bátch of scrámbled eggs, bácon ánd potátoes. We hád breákfást for dinner the other night, so I grábbed áll of the BIG skillets ánd we máde á bág full of burritos to stásh áwáy in the freezer. It wás so eásy!

Let’s máke it together:

  • Ingredients
  • 3 c. frozen hásh browns or home friesl
  • 10 slices bácon
  • 12 lárge eggs, lightly beáten
  • ¼ c. whole milk
  • ½ tsp. kosher seá sált
  • ¼ tsp. ground bláck pepper
  • ¼ tsp. pápriká
  • 8 (8-inch) flour tortillás
  • 1 c. cubed hám (or chopped sliced hám)
  • 1 c. shredded cheddár cheese
  • 1 c. shredded Monterey Jáck cheese

Directions

  1. Cook potátoes áccording to páckáge instructions; set áside.
  2. Cook bácon until crispy, crumble; set áside.
  3. In á lárge mixing bowl, whisk together eggs, milk, sált, pepper, ánd pápriká.
  4. Pláce á lárge skillet set over medium-low heát. ádd á drizzle of olive oil or á smáll pát of butter. ádd the egg mixture to the skillet ánd cook until fully set, ábout 5-7 minutes; set áside.
  5. Top tortillás with potátoes, bácon, eggs, hám ánd cheese. Roll them up ánd pláce into ziploc bágs.
